Ingredients

  • Chicken thigh - 300 grams (boneless, skinless)
  • Green onions - 2 stalks (cut into 5 cm pieces)
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Sugar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
  2. In a mixing bowl, combine soy sauce, mirin, sake, sugar, and sesame oil to create the marinade.
  3. Add the chicken pieces to the marinade, ensuring they are well coated. Marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated chicken and green onion pieces alternately onto the soaked skewers.
  6. Place the skewers on the grill and cook for about 6-8 minutes, turning occasionally until the chicken is cooked through and slightly charred.
  7. Brush the remaining marinade over the skewers during the last few minutes of cooking for extra flavor.
  8. Remove from the grill and let rest for a couple of minutes before serving.
