Ingredients

  • Chicken thigh - 300 grams, boneless and skinless, cut into bite-sized pieces
  • Spring onions - 2 stalks, cut into 5 cm pieces
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sake - 2 tablespoons
  • Sugar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Bamboo skewers - 4, soaked in water for 30 minutes

Steps

  1. In a bowl, combine soy sauce, mirin, sake, sugar, sesame oil, salt, and black pepper to create the marinade.
  2. Add the chicken pieces to the marinade and let it marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken and spring onion pieces alternately onto the soaked bamboo skewers.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  6. Brush any remaining marinade onto the skewers during the grilling process for added flavor.
  7. Remove from the grill and let rest for a couple of minutes before serving.
