- Zucchini - 200 grams
- Carrot - 100 grams
- Red bell pepper - 100 grams
- Chicken breast - 200 grams
- Coconut aminos - 3 tablespoons
- Garlic - 2 cloves
- Ginger - 1 teaspoon, grated
- Olive oil - 1 tablespoon
- Green onions - 2 stalks
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer to create noodle-like strands and set aside.
- Julienne the carrot and red bell pepper into thin strips.
- Slice the chicken breast into thin strips.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
- Add the chicken strips to the skillet, cooking until they are browned and cooked through, about 5-7 minutes.
- Stir in the carrot and red bell pepper, cooking for an additional 3-4 minutes until slightly tender.
- Add the spiralized zucchini to the skillet along with the coconut aminos. Toss everything together and cook for another 2-3 minutes until the zucchini is just tender.
- Season with salt and black pepper to taste.
- Serve hot, garnished with chopped green onions and sesame seeds.
