Ingredients

  • Zucchini - 200 grams
  • Carrot - 100 grams
  • Red bell pepper - 100 grams
  • Chicken breast - 200 grams
  • Coconut aminos - 3 tablespoons
  • Garlic - 2 cloves
  • Ginger - 1 teaspoon, grated
  • Olive oil - 1 tablespoon
  • Green onions - 2 stalks
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer to create noodle-like strands and set aside.
  2. Julienne the carrot and red bell pepper into thin strips.
  3. Slice the chicken breast into thin strips.
  4. Heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  5. Add the chicken strips to the skillet, cooking until they are browned and cooked through, about 5-7 minutes.
  6. Stir in the carrot and red bell pepper, cooking for an additional 3-4 minutes until slightly tender.
  7. Add the spiralized zucchini to the skillet along with the coconut aminos. Toss everything together and cook for another 2-3 minutes until the zucchini is just tender.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with chopped green onions and sesame seeds.
