  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Miso paste - 1 tablespoon
  • Panko breadcrumbs - 50 grams
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2 (dairy-free)
  • Lettuce leaves - 2
  • Sliced tomato - 1 medium
  • Avocado - 1 small, sliced
  • Yakiniku sauce (store-bought or homemade) - for drizzle

Steps

  1. In a mixing bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, grated carrot, chopped green onion, minced garlic, grated ginger, soy sauce, miso paste, panko breadcrumbs, sesame oil, salt, and pepper to the mashed black beans.
  3. Mix all the ingredients thoroughly until well combined. If the mixture is too wet, add more panko breadcrumbs until it holds together.
  4. Divide the mixture into two equal portions and shape them into burger patties.
  5. Heat a non-stick skillet over medium heat and lightly coat it with oil. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  7. To assemble the burgers, place a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and avocado.
  8. Drizzle some yakiniku sauce over the top and cover with the other half of the bun.
