- Black beans - 200 grams (cooked)
- Cooked quinoa - 100 grams
- Carrot - 1 medium, grated
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Miso paste - 1 tablespoon
- Panko breadcrumbs - 50 grams
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2 (dairy-free)
- Lettuce leaves - 2
- Sliced tomato - 1 medium
- Avocado - 1 small, sliced
- Yakiniku sauce (store-bought or homemade) - for drizzle
Steps
- In a mixing bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, grated carrot, chopped green onion, minced garlic, grated ginger, soy sauce, miso paste, panko breadcrumbs, sesame oil, salt, and pepper to the mashed black beans.
- Mix all the ingredients thoroughly until well combined. If the mixture is too wet, add more panko breadcrumbs until it holds together.
- Divide the mixture into two equal portions and shape them into burger patties.
- Heat a non-stick skillet over medium heat and lightly coat it with oil. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
- To assemble the burgers, place a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and avocado.
- Drizzle some yakiniku sauce over the top and cover with the other half of the bun.
