Ingredients

  • Eggplant - 200 grams
  • Zucchini - 150 grams

  • Carrot - 100 grams
  • Mushrooms (shiitake or button) - 100 grams
  • Green onions - 2 stalks
  • Olive oil - 2 tablespoons
  • Miso paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and chop the eggplant, zucchini, bell pepper, carrot, and mushrooms into bite-sized pieces.
  3. In a large mixing bowl, combine the chopped vegetables with olive oil, salt, and black pepper. Toss until evenly coated.
  4. In a small bowl, mix together the miso paste, soy sauce, and mirin to create the miso glaze.
  5. Spread the seasoned vegetables evenly onto a baking sheet lined with parchment paper.

  7. Bake in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.
