Ingredients

  • Chicken thigh - 300 grams, boneless and skinless
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sake - 1 tablespoon
  • Erythritol or Stevia - 1 tablespoon (optional for sweetness)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.
  2. In a separate bowl, combine soy sauce, mirin, sake, erythritol or stevia, minced garlic, grated ginger, sesame oil, salt, and black pepper to create the marinade.
  3. Pour the marinade over the chicken pieces, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  4. While the chicken is marinating, soak wooden skewers in water for 10 minutes to prevent burning during grilling.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated chicken onto the soaked skewers, leaving a little space between pieces for even cooking.
  7. Grill the skewers for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
  8. Remove from the grill and sprinkle with chopped green onions before serving.
