- Chicken thigh - 300 grams, boneless and skinless
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Sake - 1 tablespoon
- Erythritol or Stevia - 1 tablespoon (optional for sweetness)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, chopped
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.
- In a separate bowl, combine soy sauce, mirin, sake, erythritol or stevia, minced garlic, grated ginger, sesame oil, salt, and black pepper to create the marinade.
- Pour the marinade over the chicken pieces, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
- While the chicken is marinating, soak wooden skewers in water for 10 minutes to prevent burning during grilling.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken onto the soaked skewers, leaving a little space between pieces for even cooking.
- Grill the skewers for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
- Remove from the grill and sprinkle with chopped green onions before serving.
