- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Egg, beaten - 1 large
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- Rinse and drain the shirataki noodles according to package instructions and set aside.
- In a large pan or wok, heat the sesame oil over medium-high heat and add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced chicken breast to the pan and cook for 5-7 minutes until the chicken is browned and cooked through.
- Add the bell pepper, zucchini, and carrot to the pan, stir-frying for about 3-4 minutes until the vegetables are tender but still crisp.
- Push the chicken and vegetables to one side of the pan, pour the beaten egg into the empty space, and scramble it until fully cooked.
- Add the shirataki noodles to the pan, along with the soy sauce and black pepper. Toss everything together for another 2-3 minutes until well combined and heated through.
- Remove from heat, garnish with chopped green onions and sesame seeds, and serve hot.
