Ingredients

  • Pizza dough - 200 grams
  • Udon noodles - 150 grams
  • Bell pepper (sliced) - 50 grams
  • Carrot (julienned) - 50 grams
  • Broccoli florets - 50 grams
  • Green onions (sliced) - 30 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Miso paste - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Cook the udon noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat the sesame oil over medium heat. Add the sliced bell pepper, julienned carrot, and broccoli florets, sautéing for about 5 minutes until just tender.
  4. Add the cooked udon noodles to the skillet, along with soy sauce, miso paste, nutritional yeast, salt, and black pepper. Stir well to combine and cook for another 3-4 minutes until heated through.
  5. Roll out the pizza dough on a floured surface to your desired thickness and shape. Transfer the dough to a baking sheet lined with parchment paper.
  6. Spread the udon and vegetable mixture evenly over the pizza dough, leaving a small border around the edges.
  7. Bake in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
  8. Remove from the oven, and sprinkle with sliced green onions and sesame seeds before serving.
