- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, thinly sliced
- Zucchini - 1 medium, thinly sliced
- Soy sauce (Kosher) - 2 tablespoons
- Mirin - 1 tablespoon
- Ground beef (Kosher) - 250 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Ginger powder - 1/2 teaspoon
- Burger buns (Kosher) - 2
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
Steps
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the carrot, bell pepper, and zucchini. Stir-fry for 5-7 minutes until the vegetables are tender.
- Add the cooked udon noodles to the skillet along with the soy sauce and mirin. Toss to combine and heat through for about 2-3 minutes. Remove from heat and set aside.
- In a bowl, combine the ground beef, salt, black pepper, garlic powder, and ginger powder. Form the mixture into two patties.
- In the same skillet, heat the remaining tablespoon of vegetable oil over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until cooked to your desired doneness.
- Toast the burger buns in the skillet for the last minute of cooking, if desired.
- Assemble the burgers by placing a patty on the bottom half of each bun, topping with the yaki udon mixture, and sprinkling with chopped green onions and sesame seeds. Add the top half of the bun and serve.
