- Tofu or chicken breast - 150 grams, cubed

Steps
- Cook the udon noodles according to package instructions, drain, and set aside.
- In a large skillet or wok, heat olive oil over medium heat and add the cubed tofu or chicken. Cook until golden brown, about 5-7 minutes.
- Add minced garlic and grated ginger to the skillet, stirring for about 1 minute until fragrant.
- Add the broccoli, carrot, red bell pepper, and snap peas to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
- Add the cooked udon noodles to the skillet along with soy sauce and sesame oil. Toss everything together for another 2-3 minutes until well combined and heated through.
- Serve hot, garnished with chopped green onions and sesame seeds.
