Ingredients

  • Chicken breast - 300 grams, cut into bite-sized pieces
  • Soy sauce (kosher) - 60 ml
  • Mirin - 30 ml
  • Sake (cooking sake) - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Green onions - 2, sliced
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a bowl, whisk together soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, and sesame oil until the sugar is dissolved to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes or up to 2 hours for more flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  6. During the last few minutes of cooking, sprinkle the skewers with sliced green onions for added flavor.
  7. Remove from the grill, allow to rest for a couple of minutes, and serve warm with extra soy sauce on the side if desired.
