- Soy sauce (kosher) - 60 ml
- Mirin - 30 ml
- Sake (cooking sake) - 30 ml
- Brown sugar - 1 tablespoon (15 grams)
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 teaspoon
- Green onions - 2, sliced
- Wooden skewers - 4, soaked in water for 30 minutes
Steps
- In a bowl, whisk together soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, and sesame oil until the sugar is dissolved to create the marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes or up to 2 hours for more flavor.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- During the last few minutes of cooking, sprinkle the skewers with sliced green onions for added flavor.
- Remove from the grill, allow to rest for a couple of minutes, and serve warm with extra soy sauce on the side if desired.
