- Kosher soy sauce - 60 ml
- Mirin - 30 ml
- Sake (cooking) - 30 ml
- Brown sugar - 1 tablespoon (15 grams)
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Green onions - 2, cut into 5 cm lengths
- Sesame seeds - 1 teaspoon, for garnish
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, combine kosher soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to create the marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- Soak wooden skewers in water for about 10 minutes to prevent burning during grilling.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken and pieces of green onion alternately onto the soaked skewers.
- Season the skewers with salt and pepper to taste.
- Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Once cooked, remove from the grill and sprinkle with sesame seeds before serving.
