Ingredients

  • Chicken breast - 300 grams, cut into 2.5 cm cubes
  • Kosher soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake (cooking) - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Green onions - 2, cut into 5 cm lengths
  • Sesame seeds - 1 teaspoon, for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, combine kosher soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Soak wooden skewers in water for about 10 minutes to prevent burning during grilling.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated chicken and pieces of green onion alternately onto the soaked skewers.
  6. Season the skewers with salt and pepper to taste.
  7. Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  8. Once cooked, remove from the grill and sprinkle with sesame seeds before serving.
