Ingredients

  • Firm tofu - 300 grams
  • Cauliflower rice - 200 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, chopped
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Press the tofu between paper towels to remove excess moisture for about 10 minutes.
  2. Cut the tofu into cubes and marinate in a mixture of soy sauce, garlic, and ginger for 10 minutes.
  3. Heat sesame oil in a non-stick skillet over medium heat.
  4. Add the marinated tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add the bell pepper, zucchini, and carrot. Sauté for 5-7 minutes until tender but still crisp.
  6. Add the cauliflower rice to the vegetable mixture and stir-fry for another 3-4 minutes until heated through.
  7. Return the tofu to the skillet, mix everything together, and season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions and sesame seeds.
