- Firm tofu - 300 grams
- Cauliflower rice - 200 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Carrot - 1 medium, julienned
- Salt - to taste
- Pepper - to taste
- Sesame seeds - for garnish
Steps
- Press the tofu between paper towels to remove excess moisture for about 10 minutes.
- Cut the tofu into cubes and marinate in a mixture of soy sauce, garlic, and ginger for 10 minutes.
- Heat sesame oil in a non-stick skillet over medium heat.
- Add the marinated tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the bell pepper, zucchini, and carrot. Sauté for 5-7 minutes until tender but still crisp.
- Add the cauliflower rice to the vegetable mixture and stir-fry for another 3-4 minutes until heated through.
- Return the tofu to the skillet, mix everything together, and season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions and sesame seeds.
