- Firm tofu - 300 grams
- Cooked Japanese short-grain rice - 2 cups
- Bell pepper (sliced) - 1 medium
- Zucchini (sliced) - 1 medium
- Carrot (julienned) - 1 medium
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Maple syrup - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Green onions (sliced) - 2 for garnish
- Sesame seeds - 2 teaspoons for garnish
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into cubes.
- In a small bowl, mix soy sauce, mirin, maple syrup, minced garlic, and grated ginger to create the teriyaki sauce.
- Heat sesame oil in a large non-stick skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 10-12 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell pepper, zucchini, and julienned carrot. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
- Add the cooked tofu back to the skillet and pour the teriyaki sauce over the mixture. Stir well to coat everything evenly and cook for an additional 2-3 minutes until heated through.
- Serve the tofu and vegetable mixture over bowls of cooked rice. Garnish with sliced green onions and sesame seeds.
