Steps
- Press the tofu between paper towels to remove excess moisture for about 10 minutes, then cut into cubes.
- In a mixing bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, and rice vinegar to create a marinade.
- Add the cubed tofu to the marinade, ensuring all pieces are coated. Let it sit for 10 minutes.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the marinated tofu and cook for 5-7 minutes, turning occasionally until golden and crispy.
- In the same skillet, add the sliced red bell pepper, zucchini, and broccoli. Stir-fry for about 5 minutes until vegetables are tender but still crisp.
- To assemble the bowls, divide the stir-fried vegetables and crispy tofu between two bowls.
- Garnish with chopped green onions and sesame seeds. Serve immediately.
