Ingredients
- Sweet onions - 2 medium
- Soy sauce - 30 ml
- Maple syrup - 15 ml
- Sesame oil - 10 ml
- Rice vinegar - 10 ml
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Black sesame seeds - 1 tablespoon
- Green onions - 2, chopped
- Bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Mushrooms - 150 grams, sliced
Steps
- Preheat your grill or grill pan over medium heat.
- Peel and slice the sweet onions into thick rings, about 1.5 cm each.
- In a mixing bowl, whisk together the soy sauce, maple syrup, sesame oil, rice vinegar, minced garlic, and grated ginger to create the marinade.
- Place the onion rings in the marinade and let them soak for at least 15 minutes to absorb the flavors.
- While the onions are marinating, prepare the other vegetables by slicing the bell pepper, zucchini, and mushrooms.
- Once marinated, place the onion rings on the grill and cook for about 5-7 minutes on each side, or until they are nicely charred and tender.
- Add the sliced bell pepper, zucchini, and mushrooms to the grill during the last 10 minutes of cooking, turning occasionally until tender.
- Once everything is cooked, remove from the grill and sprinkle with black sesame seeds and chopped green onions.
- Serve immediately with your choice of rice or as a side dish.
