Ingredients

  • Sweet onions - 2 medium
  • Soy sauce - 30 ml
  • Maple syrup - 15 ml
  • Sesame oil - 10 ml
  • Rice vinegar - 10 ml
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Black sesame seeds - 1 tablespoon
  • Green onions - 2, chopped
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Mushrooms - 150 grams, sliced

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Peel and slice the sweet onions into thick rings, about 1.5 cm each.
  3. In a mixing bowl, whisk together the soy sauce, maple syrup, sesame oil, rice vinegar, minced garlic, and grated ginger to create the marinade.
  4. Place the onion rings in the marinade and let them soak for at least 15 minutes to absorb the flavors.
  5. While the onions are marinating, prepare the other vegetables by slicing the bell pepper, zucchini, and mushrooms.
  6. Once marinated, place the onion rings on the grill and cook for about 5-7 minutes on each side, or until they are nicely charred and tender.
  7. Add the sliced bell pepper, zucchini, and mushrooms to the grill during the last 10 minutes of cooking, turning occasionally until tender.
  8. Once everything is cooked, remove from the grill and sprinkle with black sesame seeds and chopped green onions.
  9. Serve immediately with your choice of rice or as a side dish.
