- Shirataki noodles - 200 grams
- Chicken breast - 200 grams, sliced thinly
- Bell pepper - 1 medium, julienned
- Zucchini - 1 medium, spiralized or sliced
- Carrot - 1 small, julienned
- Cabbage - 100 grams, shredded
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Rinse the shirataki noodles under cold water and drain them well. Pat them dry with a paper towel.
- In a large pan or wok, heat the sesame oil over medium-high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the sliced chicken breast to the pan. Cook for about 5-7 minutes, stirring frequently, until the chicken is cooked through and no longer pink.
- Add the bell pepper, zucchini, carrot, and cabbage to the pan. Stir-fry the vegetables for about 3-4 minutes until they are slightly tender but still crisp.
- Add the rinsed shirataki noodles to the pan along with the soy sauce, salt, and black pepper. Toss everything together and cook for another 2-3 minutes until heated through.
- Remove from heat, garnish with chopped green onions and sesame seeds, and serve immediately.
