Ingredients

  • Shirataki noodles - 200 grams
  • Chicken breast - 200 grams, sliced thinly
  • Bell pepper - 1 medium, julienned
  • Zucchini - 1 medium, spiralized or sliced
  • Carrot - 1 small, julienned
  • Cabbage - 100 grams, shredded
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Rinse the shirataki noodles under cold water and drain them well. Pat them dry with a paper towel.
  2. In a large pan or wok, heat the sesame oil over medium-high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  3. Add the sliced chicken breast to the pan. Cook for about 5-7 minutes, stirring frequently, until the chicken is cooked through and no longer pink.
  4. Add the bell pepper, zucchini, carrot, and cabbage to the pan. Stir-fry the vegetables for about 3-4 minutes until they are slightly tender but still crisp.
  5. Add the rinsed shirataki noodles to the pan along with the soy sauce, salt, and black pepper. Toss everything together and cook for another 2-3 minutes until heated through.
  6. Remove from heat, garnish with chopped green onions and sesame seeds, and serve immediately.
