Ingredients

  • Soba noodles - 200 grams

  • Broccoli florets - 100 grams
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Boil a pot of water and cook the soba noodles according to the package instructions, about 4-5 minutes. Drain and rinse under cold water to stop the cooking process.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the red bell pepper, carrot, and broccoli to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
  4. Add the cooked soba noodles to the skillet along with the chopped green onions, soy sauce, and oyster sauce. Toss everything together and stir-fry for another 2-3 minutes until heated through.
  5. Drizzle with sesame oil, season with salt and black pepper to taste, and mix well.
  6. Serve hot, garnished with sesame seeds and additional green onions if desired.
