- Garlic - 2 cloves, minced
- Soy sauce - 3 tablespoons
- Oyster sauce (vegetarian) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- Boil a pot of water and cook the soba noodles according to the package instructions, about 4-5 minutes. Drain and rinse under cold water to stop the cooking process.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the red bell pepper, carrot, and broccoli to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
- Add the cooked soba noodles to the skillet along with the chopped green onions, soy sauce, and oyster sauce. Toss everything together and stir-fry for another 2-3 minutes until heated through.
