Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Sugar - 10 grams
- Salt - 5 grams
- Vegetable oil - 1 tablespoon
- Yaki soba noodles - 200 grams
- Cabbage - 100 grams, shredded
- Carrot - 50 grams, julienned
- Bell pepper - 50 grams, thinly sliced
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Cooked chicken or tofu - 100 grams, diced (optional)
Steps
- In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a separate bowl, mix flour and salt. Gradually add the yeast mixture and vegetable oil, kneading until a smooth dough forms.
- Cover the dough with a cloth and let it rise in a warm place for about 30 minutes.
- In the meantime, cook the yaki soba noodles according to package instructions, then drain and set aside.
- In a large skillet, heat sesame oil over medium heat. Add cabbage, carrot, and bell pepper, sautéing until tender.
- Add the cooked noodles to the skillet along with soy sauce, mirin, and protein (if using). Stir-fry for 2-3 minutes until everything is well mixed and heated through. Stir in green onions.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 10 cm in diameter.
- Place a generous amount of the yaki soba filling in the center of each dough circle, then fold the edges to seal the bun tightly.
- Place the buns seam-side down on a parchment-lined baking sheet and let them rest for 10 minutes.
- Steam the buns in a steamer basket over boiling water for about 15 minutes until cooked through. Serve warm.
