Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 5 grams
  • Vegetable oil - 1 tablespoon
  • Yaki soba noodles - 200 grams
  • Cabbage - 100 grams, shredded
  • Carrot - 50 grams, julienned
  • Bell pepper - 50 grams, thinly sliced
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Cooked chicken or tofu - 100 grams, diced (optional)

Steps

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a separate bowl, mix flour and salt. Gradually add the yeast mixture and vegetable oil, kneading until a smooth dough forms.
  3. Cover the dough with a cloth and let it rise in a warm place for about 30 minutes.
  4. In the meantime, cook the yaki soba noodles according to package instructions, then drain and set aside.
  5. In a large skillet, heat sesame oil over medium heat. Add cabbage, carrot, and bell pepper, sautéing until tender.
  6. Add the cooked noodles to the skillet along with soy sauce, mirin, and protein (if using). Stir-fry for 2-3 minutes until everything is well mixed and heated through. Stir in green onions.
  7. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  8. Place a generous amount of the yaki soba filling in the center of each dough circle, then fold the edges to seal the bun tightly.
  9. Place the buns seam-side down on a parchment-lined baking sheet and let them rest for 10 minutes.
  10. Steam the buns in a steamer basket over boiling water for about 15 minutes until cooked through. Serve warm.
