  • Zucchini - 1 medium, sliced
  • Green onions - 2, chopped
  • Soy sauce - 3 tablespoons
  • Mirin - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the yaki soba noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the julienned carrot, sliced bell pepper, and zucchini to the skillet, stir-frying for about 5-7 minutes until the vegetables are tender-crisp.
  5. Stir in the cooked yaki soba noodles, along with the soy sauce and mirin, tossing everything together to combine and heat through for another 3-4 minutes.
  6. Season with salt and black pepper to taste, then remove from heat.
  7. Garnish with chopped green onions and sprinkle sesame seeds on top before serving.
