Ingredients

  • Salmon fillets - 300 grams

  • Mirin - 1 tablespoon

  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Mushrooms - 100 grams, sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, mix the soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
  2. Place the salmon fillets in the marinade and let them sit for 15 minutes.
  3. While the salmon is marinating, prepare the vegetables by slicing the zucchini, bell pepper, and mushrooms.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Remove the salmon from the marinade and season with salt and black pepper.
  6. Place the salmon on the grill and cook for about 4-5 minutes on each side, or until cooked through and slightly charred.
  7. While the salmon is grilling, toss the sliced vegetables in the remaining marinade and grill them for about 5-7 minutes, or until tender.
  8. Once everything is cooked, serve the grilled salmon with the vegetables and garnish with sliced green onions.
