Ingredients

  • Cooked sushi rice - 200 grams
  • Soy sauce - 30 ml
  • Nori sheets - 2 sheets
  • Grated mozzarella cheese - 100 grams
  • Cooked chicken breast, shredded - 100 grams
  • Sliced bell pepper - 50 grams
  • Chopped green onions - 30 grams
  • Olive oil - 15 ml
  • Sesame seeds - 10 grams
  • Sriracha sauce - to taste

Steps

  1. In a bowl, mix the cooked sushi rice with soy sauce until well combined.
  2. Divide the rice mixture into four equal portions and shape each portion into a triangle (onigiri).
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Place the onigiri in the skillet and grill each side for about 3-4 minutes until golden brown and crispy.
  5. Once grilled, remove the onigiri from the skillet and set aside.
  6. On each onigiri, layer shredded chicken, sliced bell pepper, and grated mozzarella cheese.
  7. Sprinkle chopped green onions and sesame seeds on top of the cheese.
  8. Return the onigiri to the skillet, cover, and cook on low heat for another 5 minutes or until the cheese is melted.
  9. Drizzle with Sriracha sauce to taste before serving.
