Ingredients

  • Short-grain rice - 200 grams
  • Water - 250 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cooked chicken breast, shredded - 100 grams
  • Nori sheets - 2, cut into strips
  • Green onions, finely chopped - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then drain.
  2. Combine the rinsed rice and water in a pot, bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until the rice is tender and water is absorbed.
  3. Remove the rice from heat and let it sit covered for an additional 10 minutes to steam.
  4. In a mixing bowl, combine the cooked rice with soy sauce, mirin, sesame oil, shredded chicken, green onions, salt, and pepper. Mix well.
  5. Divide the rice mixture into 4 equal portions and shape each portion into triangular or oval onigiri forms.
  6. Preheat a grill or a non-stick skillet over medium heat. Lightly oil the grill or skillet.
  7. Grill each onigiri for 3-4 minutes on each side until golden brown and crispy.
  8. Remove from the grill and wrap a strip of nori around each onigiri for added flavor and presentation.
