Ingredients
- Cooked sushi rice - 200 grams
- Nori sheets - 2 sheets
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 tablespoon
- Mushrooms (shiitake or button) - 150 grams, chopped
- Carrot - 1 medium, grated
- Green onion - 2 stalks, finely chopped
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Avocado - 1 medium, sliced
- Vegan mayo - 2 tablespoons
- Pickled ginger - for garnish
- Sesame seeds - for garnish
Steps
- In a bowl, combine the cooked sushi rice, 1 tablespoon of soy sauce, 1 tablespoon of mirin, and a pinch of salt. Mix well and let it cool slightly.
- Divide the rice mixture into 4 equal portions and shape them into flat patties.
- Heat sesame oil in a non-stick skillet over medium heat. Grill each rice patty for about 3-4 minutes on each side until golden brown and crispy.
- In the same skillet, add the chopped mushrooms, grated carrot, green onion, remaining soy sauce, and pepper. Stir-fry for about 5-7 minutes until the vegetables are cooked through.
- Assemble the burger by placing a rice patty on a plate, topping it with a generous amount of the sautéed vegetable mixture, avocado slices, and a dollop of vegan mayo. Optionally, add pickled ginger and sprinkle sesame seeds on top.
- Top with another rice patty to complete the burger. Serve immediately.
