Ingredients

  • Udon noodles - 200 grams

  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 small, julienned
  • Soy sauce - 3 tablespoons
  • Oyster sauce (Halal) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Spring onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the udon noodles according to package instructions until al dente, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  4. Add the julienned carrot, sliced bell pepper, and zucchini to the skillet. Stir-fry for about 5 minutes until the vegetables are tender yet crisp.
  5. Add the cooked udon noodles to the skillet, followed by the soy sauce, oyster sauce, and sesame oil. Toss everything together to ensure the noodles are well-coated with the sauce.
  6. Cook for an additional 2-3 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped spring onions and sesame seeds before serving.
