Ingredients

  • Garlic cloves - 10 cloves
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sesame oil - 10 ml
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Eggplant - 1 small, sliced
  • Green onion - 2 stalks, chopped
  • Black sesame seeds - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. Peel the garlic cloves and place them in a small bowl with soy sauce, mirin, and sesame oil. Toss to coat and marinate for 10 minutes.
  3. While the garlic is marinating, prepare the vegetables by slicing the zucchini, red bell pepper, and eggplant.
  4. Once marinated, thread the garlic cloves and sliced vegetables onto skewers, alternating between garlic and vegetables.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Remove the skewers from the grill and sprinkle with chopped green onion and black sesame seeds.
  7. Serve hot, garnished with fresh parsley.
