Ingredients

  • Almond flour - 200 grams
  • Egg - 1 large
  • Water - 100 ml
  • Beef sirloin - 200 grams, thinly sliced
  • Soy sauce (coconut aminos for Paleo) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. In a bowl, combine almond flour, egg, and water to form a dough. Knead until smooth and let it rest for 10 minutes.
  2. Roll out the dough on a floured surface to about 5 mm thickness and cut into udon noodle shapes (thick strips).
  3. Bring a pot of water to a boil and cook the almond flour noodles for 3-4 minutes until tender. Drain and set aside.
  4. In a large skillet, heat sesame oil over medium-high heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  5. Add the sliced beef sirloin to the skillet, seasoning with salt and pepper. Cook until browned, about 3-4 minutes.
  6. Stir in the sliced bell pepper and zucchini, cooking for another 2-3 minutes until the vegetables are slightly tender.
  7. Pour in the coconut aminos (soy sauce), tossing everything together until well coated and heated through.
  8. Add the cooked almond flour noodles to the skillet, gently mixing to combine all ingredients. Cook for an additional 1-2 minutes until warmed through.
  9. Serve hot, garnished with chopped green onions and sesame seeds.
