Ingredients

  • Eggplant - 2 medium-sized
  • White miso paste - 4 tablespoons
  • Mirin - 2 tablespoons
  • Sugar - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, for garnish
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat the grill or broiler to medium-high heat.
  2. Slice the eggplants in half lengthwise and score the flesh in a diamond pattern, being careful not to cut through the skin.
  3. In a small bowl, mix the white miso paste, mirin, sugar, soy sauce, and sesame oil until well combined.
  4. Brush the miso mixture generously over the cut side of the eggplants.
  5. Place the eggplants cut side up on the grill or under the broiler.
  6. Grill for about 15-20 minutes, or until the eggplants are tender and the miso is caramelized, turning once halfway through cooking.
