Ingredients

  • Eggplant - 300 grams
  • Cauliflower - 300 grams
  • Coconut oil - 2 tablespoons
  • Miso paste (white) - 2 tablespoons
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Fresh ginger (grated) - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Green onions (sliced) - 2 tablespoons
  • Sesame seeds (toasted) - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Cut the eggplant into 1 cm thick slices and season with salt and pepper.
  3. Brush the eggplant slices with coconut oil on both sides and grill for about 5-7 minutes on each side until tender and slightly charred.
  4. While the eggplant is grilling, prepare the cauliflower rice by pulsing the cauliflower florets in a food processor until they resemble rice grains.
  5. In a large skillet, heat 1 tablespoon of coconut oil over medium heat, add the cauliflower rice, and sauté for about 5-7 minutes or until tender, stirring occasionally. Season with salt and pepper to taste.
  6. In a small bowl, mix together miso paste, coconut aminos, sesame oil, grated ginger, and minced garlic to create the sauce.
  7. Once the eggplant is grilled, remove it from the heat and drizzle the miso sauce over the top.
  8. To serve, place cauliflower rice in bowls, top with grilled eggplant, and garnish with sliced green onions and toasted sesame seeds.
