- Eggplant - 300 grams
- Cauliflower - 300 grams

- Coconut aminos - 2 tablespoons
- Sesame oil - 1 teaspoon
- Fresh ginger (grated) - 1 teaspoon
- Garlic (minced) - 1 clove
- Green onions (sliced) - 2 tablespoons
- Sesame seeds (toasted) - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the grill or a grill pan over medium-high heat.
- Cut the eggplant into 1 cm thick slices and season with salt and pepper.
- Brush the eggplant slices with coconut oil on both sides and grill for about 5-7 minutes on each side until tender and slightly charred.
- While the eggplant is grilling, prepare the cauliflower rice by pulsing the cauliflower florets in a food processor until they resemble rice grains.
- In a large skillet, heat 1 tablespoon of coconut oil over medium heat, add the cauliflower rice, and sauté for about 5-7 minutes or until tender, stirring occasionally. Season with salt and pepper to taste.
- In a small bowl, mix together miso paste, coconut aminos, sesame oil, grated ginger, and minced garlic to create the sauce.
- Once the eggplant is grilled, remove it from the heat and drizzle the miso sauce over the top.
- To serve, place cauliflower rice in bowls, top with grilled eggplant, and garnish with sliced green onions and toasted sesame seeds.
