Ingredients

  • Bitter melon (goya) - 200 grams
  • Japanese eggplant - 200 grams
  • Miso paste - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 1 clove
  • Ginger, grated - 1 teaspoon
  • Green onions, sliced - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. Slice the bitter melon in half lengthwise and scoop out the seeds using a spoon. Cut into thin slices.
  3. Slice the Japanese eggplant lengthwise into quarters and then into bite-sized pieces.
  4. In a small bowl, mix together the miso paste, coconut aminos, sesame oil, minced garlic, grated ginger, and water to create the miso glaze.
  5. Brush the miso glaze generously over the sliced bitter melon and eggplant.
  6. Place the glazed vegetables on the grill and cook for about 5-7 minutes on each side or until they are tender and have nice grill marks.
  7. Remove from the grill and sprinkle with sliced green onions and sesame seeds before serving.
