- Ginger, grated - 1 teaspoon
- Green onions, sliced - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Water - 2 tablespoons
Steps
- Preheat a grill or grill pan over medium heat.
- Slice the bitter melon in half lengthwise and scoop out the seeds using a spoon. Cut into thin slices.
- Slice the Japanese eggplant lengthwise into quarters and then into bite-sized pieces.
- In a small bowl, mix together the miso paste, coconut aminos, sesame oil, minced garlic, grated ginger, and water to create the miso glaze.
- Brush the miso glaze generously over the sliced bitter melon and eggplant.
- Place the glazed vegetables on the grill and cook for about 5-7 minutes on each side or until they are tender and have nice grill marks.
