Ingredients

  • Bitter melon (goya) - 200 grams
  • White miso paste - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Fresh ginger - 1 teaspoon, grated
  • Olive oil - 1 tablespoon
  • Green onions - 2 stalks, sliced
  • Sesame seeds - 1 tablespoon

Steps

  1. Slice the bitter melon in half lengthwise and scoop out the seeds with a spoon.
  2. Cut the bitter melon into thin slices and soak in salted water for 10 minutes to reduce bitterness, then drain and pat dry.
  3. In a bowl, mix the white miso paste, coconut aminos, sesame oil, minced garlic, and grated ginger to create the marinade.
  4. Add the sliced bitter melon to the marinade, ensuring each piece is well-coated. Let it marinate for 15 minutes.
  5. Preheat a grill or grill pan over medium heat and lightly grease with olive oil.
  6. Place the marinated bitter melon slices on the grill and cook for 3-4 minutes on each side, or until they are tender and have grill marks.
  7. Once cooked, remove from the grill and sprinkle with sliced green onions and sesame seeds before serving.
