Ingredients

  • Cooked rice - 300 grams (preferably day-old)
  • Vegetable oil - 2 tablespoons
  • Carrot - 1 small, diced
  • Green bell pepper - 1 small, diced
  • Peas - 100 grams (fresh or frozen)
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Egg - 1, lightly beaten (optional for strict vegetarian)

Steps

  1. Heat the vegetable oil in a large non-stick skillet or wok over medium heat.
  2. Add the diced carrot and bell pepper, and sauté for about 3-4 minutes until they begin to soften.
  3. Stir in the peas and continue to cook for another 2 minutes.
  4. Push the vegetables to one side of the skillet and pour the beaten egg (if using) into the other side, scrambling it gently until cooked through.
  5. Add the cooked rice to the skillet, mixing it with the vegetables and egg, and break up any clumps.
  6. Pour the soy sauce and sesame oil over the rice, stirring well to combine all the ingredients.
  7. Season with salt and black pepper to taste, and stir-fry for another 3-4 minutes until everything is heated through.
  8. Remove from heat, garnish with chopped green onions, and serve immediately.
