- Cooked rice - 300 grams (preferably day-old)
- Vegetable oil - 2 tablespoons
- Carrot - 1 small, diced
- Green bell pepper - 1 small, diced
- Peas - 100 grams (fresh or frozen)
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Egg - 1, lightly beaten (optional for strict vegetarian)
Steps
- Heat the vegetable oil in a large non-stick skillet or wok over medium heat.
- Add the diced carrot and bell pepper, and sauté for about 3-4 minutes until they begin to soften.
- Stir in the peas and continue to cook for another 2 minutes.
- Push the vegetables to one side of the skillet and pour the beaten egg (if using) into the other side, scrambling it gently until cooked through.
- Add the cooked rice to the skillet, mixing it with the vegetables and egg, and break up any clumps.
- Pour the soy sauce and sesame oil over the rice, stirring well to combine all the ingredients.
- Season with salt and black pepper to taste, and stir-fry for another 3-4 minutes until everything is heated through.
- Remove from heat, garnish with chopped green onions, and serve immediately.
