Ingredients
- Koshihikari rice - 150 grams
- Water - 300 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Zucchini - 100 grams, sliced
- Bell pepper - 100 grams, sliced
- Shiitake mushrooms - 100 grams, sliced
- Asparagus - 100 grams, trimmed
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon, toasted
Steps
- Rinse the Koshihikari rice under cold water until the water runs clear, then soak for 30 minutes.
- In a pot, combine the soaked rice and 300 ml of water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it steam for 10 minutes.
- In a bowl, mix the soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
- Add the sliced zucchini, bell pepper, shiitake mushrooms, and asparagus to the marinade, and let them sit for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
- Fluff the cooked Koshihikari rice with a fork and divide it between two serving plates.
- Top the rice with the grilled vegetables, sprinkle with chopped green onions and toasted sesame seeds, and serve immediately.
