- Carrot - 100 grams, julienned
- Zucchini - 100 grams, julienned
- Red Bell Pepper - 50 grams, thinly sliced
- Green Onion - 30 grams, finely chopped
- Firm Tofu - 150 grams, crumbled
- All-Purpose Flour - 50 grams
- Cornstarch - 30 grams
- Vegetable Broth - 100 ml
- Soy Sauce - 1 tablespoon
- Vegetable Oil - for frying
- Salt - to taste
- Black Pepper - to taste
Steps
- In a large mixing bowl, combine the julienned carrot, zucchini, sliced red bell pepper, chopped green onion, and crumbled tofu.
- In a separate bowl, mix the all-purpose flour, cornstarch, vegetable broth, soy sauce, salt, and black pepper to create a batter.
- Pour the batter over the vegetable and tofu mixture, and gently mix until all ingredients are evenly coated.
- Heat vegetable oil in a frying pan over medium heat, enough to cover the bottom of the pan.
- Using a tablespoon, drop spoonfuls of the mixture into the hot oil, flattening them slightly to form patties.
- Fry each side for about 3-4 minutes or until golden brown and crispy. Avoid overcrowding the pan.
- Once cooked, remove the kakiage from the pan and place them on paper towels to drain excess oil.
- Serve hot with a side of soy sauce or your favorite dipping sauce.
