Ingredients

  • Japanese sweet potato (yaki imo) - 300 grams
  • Greek yogurt (plain, low-fat) - 200 grams
  • Honey - 2 tablespoons
  • Granola - 50 grams
  • Chia seeds - 1 tablespoon
  • Matcha powder - 1 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the Japanese sweet potatoes thoroughly and pat them dry.
  3. Wrap each sweet potato in aluminum foil and place them directly on the oven rack.
  4. Roast the sweet potatoes for about 45-50 minutes, or until they are tender when pierced with a fork.
  5. While the sweet potatoes are roasting, prepare the yogurt mixture by combining Greek yogurt, honey, matcha powder, vanilla extract, and a pinch of salt in a bowl. Mix well until smooth.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool slightly before unwrapping.
  7. Cut the sweet potatoes in half lengthwise and scoop out the flesh into a bowl. Mash the sweet potato with a fork until smooth.
  8. In serving glasses, layer the mashed sweet potato, matcha yogurt mixture, and granola. Repeat the layers until the glasses are filled to the top.
  9. Top each parfait with a sprinkle of chia seeds and a drizzle of honey if desired.
  10. Serve immediately or refrigerate for up to 1 hour before serving.
