- Granola - 50 grams
- Chia seeds - 1 tablespoon
- Matcha powder - 1 teaspoon
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 200°C (400°F).
- Wash the Japanese sweet potatoes thoroughly and pat them dry.
- Wrap each sweet potato in aluminum foil and place them directly on the oven rack.
- Roast the sweet potatoes for about 45-50 minutes, or until they are tender when pierced with a fork.
- While the sweet potatoes are roasting, prepare the yogurt mixture by combining Greek yogurt, honey, matcha powder, vanilla extract, and a pinch of salt in a bowl. Mix well until smooth.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly before unwrapping.
- Cut the sweet potatoes in half lengthwise and scoop out the flesh into a bowl. Mash the sweet potato with a fork until smooth.
- In serving glasses, layer the mashed sweet potato, matcha yogurt mixture, and granola. Repeat the layers until the glasses are filled to the top.
- Top each parfait with a sprinkle of chia seeds and a drizzle of honey if desired.
- Serve immediately or refrigerate for up to 1 hour before serving.
