- Japanese sweet potatoes - 400 grams
- Shelled edamame - 100 grams
- Olive oil - 1 tablespoon
- Sea salt - 1 teaspoon
- Black sesame seeds - 1 teaspoon
- Fresh chives, chopped - 2 tablespoons
Steps
- Preheat the grill to medium heat (about 200°C).
- Wash the sweet potatoes thoroughly, then poke several holes in them using a fork.
- Wrap each sweet potato in aluminum foil and place them on the grill. Cook for about 30-35 minutes, turning occasionally, until tender.
- While the sweet potatoes are grilling, boil the edamame in salted water for about 5-7 minutes until tender. Drain and set aside.
- Once the sweet potatoes are cooked, unwrap them and let them cool slightly before slicing them in half lengthwise.
- Drizzle olive oil over the sweet potato halves and sprinkle with sea salt and black sesame seeds.
- Place the sweet potato halves back on the grill for an additional 5 minutes to get a nice char.
- Serve the grilled sweet potatoes topped with edamame and chopped chives.
