Ingredients

  • Japanese sweet potatoes - 400 grams
  • Shelled edamame - 100 grams
  • Olive oil - 1 tablespoon
  • Sea salt - 1 teaspoon
  • Black sesame seeds - 1 teaspoon
  • Fresh chives, chopped - 2 tablespoons

Steps

  1. Preheat the grill to medium heat (about 200°C).
  2. Wash the sweet potatoes thoroughly, then poke several holes in them using a fork.
  3. Wrap each sweet potato in aluminum foil and place them on the grill. Cook for about 30-35 minutes, turning occasionally, until tender.
  4. While the sweet potatoes are grilling, boil the edamame in salted water for about 5-7 minutes until tender. Drain and set aside.
  5. Once the sweet potatoes are cooked, unwrap them and let them cool slightly before slicing them in half lengthwise.
  6. Drizzle olive oil over the sweet potato halves and sprinkle with sea salt and black sesame seeds.
  7. Place the sweet potato halves back on the grill for an additional 5 minutes to get a nice char.
  8. Serve the grilled sweet potatoes topped with edamame and chopped chives.
