Ingredients

  • Sunflower seeds - 30 grams
  • Olive oil - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Soy sauce (or coconut aminos) - 1 tablespoon
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cut the bitter melon in half lengthwise, remove the seeds, and slice it into thin half-moons.
  2. In a pot of boiling water, blanch the bitter melon for about 2 minutes, then drain and rinse under cold water to stop the cooking process.
  3. In a large mixing bowl, combine the blanched bitter melon, cucumber, carrot, red bell pepper, green onion, and sunflower seeds.
  4. In a small bowl, whisk together olive oil, rice vinegar, sesame oil, soy sauce, grated ginger, minced garlic, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
