  • Sesame oil - 1 tablespoon (15ml)
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Green onions - 2 stalks (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. Wash the zucchini and slice them into 1/2 inch thick rounds.
  3. In a mixing bowl, combine miso paste, coconut aminos, sesame oil, minced garlic, and grated ginger to create a marinade.
  4. Add the zucchini rounds to the marinade and toss until evenly coated. Let them marinate for at least 10 minutes.
  5. Place the marinated zucchini on the grill and cook for about 4-5 minutes on each side, or until grill marks appear and the zucchini is tender.
