Ingredients

  • Chicken breast - 300 grams
  • Cauliflower - 1 medium head (about 600 grams)
  • Zucchini - 1 medium (about 200 grams)
  • Bell pepper - 1 medium (about 150 grams)
  • Green onions - 3 stalks
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves
  • Ginger - 1 teaspoon (grated)
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Start by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower and cut it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
  2. Slice the chicken breast into thin strips. In a bowl, combine the chicken, coconut aminos, sesame oil, minced garlic, grated ginger, salt, and black pepper. Marinate for at least 10 minutes.
  3. While the chicken is marinating, chop the zucchini and bell pepper into bite-sized pieces. Finely chop the green onions, separating the white and green parts.
  4. Heat a large skillet over medium heat. Add a little sesame oil and sauté the chicken for about 5-7 minutes, or until fully cooked and browned. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the white parts of the green onions, zucchini, and bell pepper. Sauté for 4-5 minutes until tender but still crisp.
  6. Add the cauliflower rice to the skillet with the vegetables. Stir well and cook for an additional 5 minutes, allowing the cauliflower to soften slightly.
  7. Return the cooked chicken to the skillet and mix everything together. Adjust seasoning with salt and pepper if necessary.
  8. Serve the Yaki Goya Bowl hot, garnished with the green parts of the green onions and sesame seeds if desired.
