Ingredients
- Chicken breast - 300 grams
- Cauliflower - 1 medium head (about 600 grams)
- Zucchini - 1 medium (about 200 grams)
- Bell pepper - 1 medium (about 150 grams)
- Green onions - 3 stalks
- Coconut aminos - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves
- Ginger - 1 teaspoon (grated)
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon (optional)
Steps
- Start by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower and cut it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
- Slice the chicken breast into thin strips. In a bowl, combine the chicken, coconut aminos, sesame oil, minced garlic, grated ginger, salt, and black pepper. Marinate for at least 10 minutes.
- While the chicken is marinating, chop the zucchini and bell pepper into bite-sized pieces. Finely chop the green onions, separating the white and green parts.
- Heat a large skillet over medium heat. Add a little sesame oil and sauté the chicken for about 5-7 minutes, or until fully cooked and browned. Remove the chicken from the skillet and set aside.
- In the same skillet, add the white parts of the green onions, zucchini, and bell pepper. Sauté for 4-5 minutes until tender but still crisp.
- Add the cauliflower rice to the skillet with the vegetables. Stir well and cook for an additional 5 minutes, allowing the cauliflower to soften slightly.
- Return the cooked chicken to the skillet and mix everything together. Adjust seasoning with salt and pepper if necessary.
- Serve the Yaki Goya Bowl hot, garnished with the green parts of the green onions and sesame seeds if desired.
