Ingredients

  • Chicken breast - 300 grams
  • Coconut aminos - 3 tablespoons
  • Fresh ginger, grated - 1 tablespoon
  • Garlic, minced - 1 clove
  • Sesame oil - 1 tablespoon
  • Zucchini, sliced - 1 medium
  • Bell pepper, sliced - 1 medium
  • Carrot, julienned - 1 medium
  • Green onions, chopped - 2
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 teaspoon

Steps

  1. In a bowl, combine coconut aminos, grated ginger, minced garlic, sesame oil, salt, and black pepper to create the marinade.
  2. Cut the chicken breast into thin strips and add it to the marinade, ensuring all pieces are well coated. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by slicing zucchini, bell pepper, and julienning the carrot.
  4. Heat a non-stick skillet over medium-high heat and add a bit of sesame oil.
  5. Add the marinated chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and golden brown.
  6. Remove the chicken from the skillet and set aside.
  7. In the same skillet, add the zucchini, bell pepper, and carrot, and sauté for about 5-7 minutes until just tender.
  8. Return the chicken to the skillet, add chopped green onions, and stir everything together for another 2 minutes.
  9. Serve hot, garnished with sesame seeds on top.
