Ingredients
- Chicken breast - 300 grams
- Coconut aminos - 3 tablespoons
- Fresh ginger, grated - 1 tablespoon
- Garlic, minced - 1 clove
- Sesame oil - 1 tablespoon
- Zucchini, sliced - 1 medium
- Bell pepper, sliced - 1 medium
- Carrot, julienned - 1 medium
- Green onions, chopped - 2
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 teaspoon
Steps
- In a bowl, combine coconut aminos, grated ginger, minced garlic, sesame oil, salt, and black pepper to create the marinade.
- Cut the chicken breast into thin strips and add it to the marinade, ensuring all pieces are well coated. Let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by slicing zucchini, bell pepper, and julienning the carrot.
- Heat a non-stick skillet over medium-high heat and add a bit of sesame oil.
- Add the marinated chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the zucchini, bell pepper, and carrot, and sauté for about 5-7 minutes until just tender.
- Return the chicken to the skillet, add chopped green onions, and stir everything together for another 2 minutes.
- Serve hot, garnished with sesame seeds on top.
