Ingredients

  • Garlic - 1 clove

  • Cherry tomatoes - 100 grams
  • Green onions - 2 stalks

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Wash and chop the cauliflower into florets, then steam until tender, about 8-10 minutes.
  3. Once steamed, let the cauliflower cool, then blend it in a food processor until it resembles rice.
  4. In a bowl, mix the riced cauliflower with almond flour, egg, salt, and olive oil until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, forming a round crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  7. While the crust is baking, prepare the wasabi pesto by blending basil leaves, wasabi paste, garlic, and Parmesan cheese (if using) in a food processor until smooth.
  8. Slice the cherry tomatoes and chop the green onions while the crust is baking.

  10. Top with sliced cherry tomatoes and sprinkle with chopped green onions.
