Ingredients
- bracken starch (warabi-ko) - 50 grams
- water - 200 milliliters
- kuromitsu syrup (black sugar syrup) - 30 milliliters
- kinako (roasted soybean flour) - 20 grams
- sugar - 10 grams
- cornstarch - 10 grams (for dusting)
Steps
- In a saucepan, mix the bracken starch and sugar with water until smooth.
- Place the saucepan over medium heat and continuously stir the mixture until it thickens and becomes translucent, about 10-15 minutes.
- Once thickened, pour the mixture into a shallow dish and let it cool for about 10 minutes.
- Once cooled, dust your hands and a cutting board with cornstarch to prevent sticking.
- Gently knead and shape the mochi into small bite-sized pieces.
- Dust each piece with more cornstarch to prevent them from sticking together.
- Serve the warabi mochi drizzled with kuromitsu syrup and sprinkled with kinako.
