Ingredients

  • bracken starch (warabi-ko) - 50 grams
  • water - 200 milliliters
  • kuromitsu syrup (black sugar syrup) - 30 milliliters
  • kinako (roasted soybean flour) - 20 grams
  • sugar - 10 grams
  • cornstarch - 10 grams (for dusting)

Steps

  1. In a saucepan, mix the bracken starch and sugar with water until smooth.
  2. Place the saucepan over medium heat and continuously stir the mixture until it thickens and becomes translucent, about 10-15 minutes.
  3. Once thickened, pour the mixture into a shallow dish and let it cool for about 10 minutes.
  4. Once cooled, dust your hands and a cutting board with cornstarch to prevent sticking.
  5. Gently knead and shape the mochi into small bite-sized pieces.
  6. Dust each piece with more cornstarch to prevent them from sticking together.
  7. Serve the warabi mochi drizzled with kuromitsu syrup and sprinkled with kinako.
