  • Green onions - 2 stalks, cut into 5 cm lengths
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Honey or maple syrup - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a bowl, mix soy sauce, mirin, sesame oil, honey (or maple syrup), salt, and pepper to create the marinade.
  2. Add the sliced zucchini, bell pepper, mushrooms, cherry tomatoes, and green onions to the marinade and toss well to coat everything evenly.
  3. Let the vegetables marinate for at least 15 minutes to absorb the flavors.
  4. Preheat a grill or grill pan over medium heat.
  5. Thread the marinated vegetables onto the soaked wooden skewers, alternating them for variety.
  6. Grill the skewers for about 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
