- Udon noodles - 200 grams
- Vegetable broth - 800 ml
- Carrot - 1 medium, julienned
- Shiitake mushrooms - 100 grams, sliced
- Broccoli florets - 100 grams
- Baby spinach - 100 grams
- Green onions - 2, sliced
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, cooking until fragrant, about 1 minute.
- Add the sliced shiitake mushrooms and julienned carrot to the pot, stirring occasionally for about 3-4 minutes until softened.
- Pour in the vegetable broth, soy sauce, and mirin. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
- Add the broccoli florets and cook for an additional 5 minutes until they are bright green and tender.
- Meanwhile, cook the udon noodles according to package instructions, usually about 8-10 minutes. Drain and set aside.
- Add the baby spinach to the soup and cook for another 1-2 minutes until wilted. Season with salt and black pepper to taste.
- In serving bowls, divide the cooked udon noodles and pour the hot vegetable broth and vegetables over the noodles. Top with sliced green onions.
