Ingredients

  • Udon noodles - 200 grams
  • Vegetable broth - 800 ml
  • Carrot - 1 medium, julienned
  • Shiitake mushrooms - 100 grams, sliced
  • Broccoli florets - 100 grams
  • Baby spinach - 100 grams
  • Green onions - 2, sliced
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, cooking until fragrant, about 1 minute.
  2. Add the sliced shiitake mushrooms and julienned carrot to the pot, stirring occasionally for about 3-4 minutes until softened.
  3. Pour in the vegetable broth, soy sauce, and mirin. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
  4. Add the broccoli florets and cook for an additional 5 minutes until they are bright green and tender.
  5. Meanwhile, cook the udon noodles according to package instructions, usually about 8-10 minutes. Drain and set aside.
  6. Add the baby spinach to the soup and cook for another 1-2 minutes until wilted. Season with salt and black pepper to taste.
  7. In serving bowls, divide the cooked udon noodles and pour the hot vegetable broth and vegetables over the noodles. Top with sliced green onions.
