  • Pizza dough - 250 grams
  • All-purpose flour - 100 grams
  • Ice water - 150 ml
  • Cornstarch - 50 grams
  • Baking powder - 1 teaspoon
  • Vegetable oil (for frying) - 500 ml
  • Sweet potato (sliced thin) - 100 grams
  • Bell pepper (sliced) - 100 grams
  • Zucchini (sliced) - 100 grams
  • Carrot (sliced thin) - 50 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Japanese mayonnaise - 2 tablespoons
  • Fresh basil leaves - a handful
  • Sesame seeds - 1 tablespoon

Steps

  1. Prepare the pizza dough by kneading it for about 10 minutes until smooth. Let it rest for 30 minutes.
  2. In a bowl, mix the all-purpose flour, cornstarch, baking powder, and ice water to create the tempura batter. The batter should be lumpy; do not overmix.
  3. Heat the vegetable oil in a deep pan to 180°C (350°F).
  4. Dip each vegetable slice into the tempura batter and carefully place them in the hot oil. Fry until golden and crispy, about 3-4 minutes. Remove and drain on paper towels.
  5. Preheat the oven to 220°C (430°F). Roll out the rested pizza dough on a floured surface to your desired thickness.
  6. Transfer the rolled dough to a pizza stone or baking sheet. Spread a thin layer of soy sauce and mirin mixture over the base.
  7. Arrange the tempura vegetables evenly over the pizza dough. Drizzle Japanese mayonnaise on top and sprinkle with sesame seeds.
  8. Bake in the preheated oven for 10-12 minutes, or until the crust is golden and crispy.
  9. Remove from the oven and garnish with fresh basil leaves before serving.
