Ingredients

  • Potatoes - 250 grams
  • Carrot - 50 grams, grated
  • Onion - 50 grams, finely chopped
  • Green peas - 50 grams, cooked
  • Corn - 50 grams, cooked
  • Panko breadcrumbs - 100 grams
  • All-purpose flour - 30 grams
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Soy sauce - 1 teaspoon
  • Vegetable oil - for frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Ketchup - to taste
  • Mayonnaise - to taste

Steps

  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly before mashing.
  2. In a pan, heat a little oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. In a large mixing bowl, combine the mashed potatoes, sautéed onions, grated carrot, green peas, corn, soy sauce, salt, and black pepper. Mix well until all ingredients are combined.
  4. Form the mixture into two equal-sized patties.
  5. Dredge each patty in flour, dip in beaten egg, then coat with panko breadcrumbs, pressing gently to adhere.
  6. Heat vegetable oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy. Drain on paper towels.
  7. Toast the burger buns lightly in the pan.
  8. Assemble the burgers by placing a lettuce leaf on each bun, adding the crispy korokke patty, a slice of tomato, and your desired amount of ketchup and mayonnaise. Top with the other half of the bun.
  9. Serve immediately with a side of salad or fries.
