  • Shiitake mushrooms - 100 grams, sliced
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 100 ml
  • Spinach - 50 grams, fresh
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the Japanese short-grain rice according to package instructions and set aside, keeping it warm.
  2. In a large skillet or wok, heat the sesame oil over medium heat.
  3. Add the julienned carrot and sliced zucchini, and sauté for about 3 minutes until slightly tender.
  4. Add the sliced bell pepper and shiitake mushrooms, continuing to sauté for another 3-4 minutes.
  5. Pour in the vegetable broth, soy sauce, and mirin, stirring to combine. Let it simmer for 5 minutes to allow the flavors to meld.
  6. Add the fresh spinach and chopped green onions, cooking for an additional 2 minutes until the spinach wilts.
  7. Season with salt and pepper to taste, then remove from heat.
  8. To serve, place a generous scoop of cooked rice in a bowl and top with the vegetable mixture.
  9. Garnish with toasted sesame seeds and additional green onions if desired.
