- Soba noodles - 200 grams

- Soy sauce - 4 tablespoons
- Mirin - 2 tablespoons
- Dashi (vegan) - 1 cup
- Wasabi - to taste (optional)
Steps
- Bring 1.5 liters of water to a boil in a large pot.
- Add the soba noodles to the boiling water and cook according to package instructions, usually about 4-5 minutes.
- Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and cool them down.
- In a small saucepan, combine the soy sauce, mirin, and vegan dashi. Heat gently until warmed through, but do not boil.
- Prepare the serving plates by placing the cold soba noodles in the center.
- Pour the dipping sauce into small bowls for each serving.
- Garnish the soba with nori strips, chopped green onions, and toasted sesame seeds.
- Serve the soba noodles with dipping sauce on the side, and add wasabi if desired.
