Ingredients

  • Soba noodles - 200 grams
  • Water - 1.5 liters (for boiling noodles)
  • Nori seaweed - 1 sheet, cut into thin strips
  • Green onions - 2 stalks, finely chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Soy sauce - 4 tablespoons
  • Mirin - 2 tablespoons
  • Dashi (vegan) - 1 cup
  • Wasabi - to taste (optional)

Steps

  1. Bring 1.5 liters of water to a boil in a large pot.
  2. Add the soba noodles to the boiling water and cook according to package instructions, usually about 4-5 minutes.
  3. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and cool them down.
  4. In a small saucepan, combine the soy sauce, mirin, and vegan dashi. Heat gently until warmed through, but do not boil.
  5. Prepare the serving plates by placing the cold soba noodles in the center.
  6. Pour the dipping sauce into small bowls for each serving.
  7. Garnish the soba with nori strips, chopped green onions, and toasted sesame seeds.
  8. Serve the soba noodles with dipping sauce on the side, and add wasabi if desired.
