- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 tsp
- Soy sauce - 2 tbsp
- Vegetable oil - 2 tbsp
- Sesame oil - 1 tsp
- Black sesame seeds - 1 tbsp
- Salt - to taste
- Pepper - to taste
Steps
- Cook the soba noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced mushrooms and cook for 3-4 minutes until they start to soften.
- Stir in the shredded cabbage, julienned carrot, and sliced bell pepper; sauté for another 5 minutes until the vegetables are tender.
- Add the cooked soba noodles to the skillet, then pour in the soy sauce and sesame oil, tossing everything together to combine and heat through.
- Season with salt and pepper to taste, then remove from heat.
- Serve hot, garnished with sliced green onions and black sesame seeds.
