Ingredients

  • Soba noodles - 150g

  • Bell pepper (sliced) - 50g
  • Green onion (sliced) - 2 stalks
  • Mushrooms (sliced, shiitake or button) - 100g
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 tsp
  • Soy sauce - 2 tbsp
  • Vegetable oil - 2 tbsp
  • Sesame oil - 1 tsp
  • Black sesame seeds - 1 tbsp
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the soba noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  4. Add the sliced mushrooms and cook for 3-4 minutes until they start to soften.
  5. Stir in the shredded cabbage, julienned carrot, and sliced bell pepper; sauté for another 5 minutes until the vegetables are tender.
  6. Add the cooked soba noodles to the skillet, then pour in the soy sauce and sesame oil, tossing everything together to combine and heat through.
  7. Season with salt and pepper to taste, then remove from heat.
  8. Serve hot, garnished with sliced green onions and black sesame seeds.
