Steps
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a large non-stick skillet or wok, heat the sesame oil over medium heat.
- Add the minced garlic and ginger to the skillet and sauté for about 1 minute until fragrant.
- Add the cubed tofu and cook until golden brown, about 5-7 minutes, stirring occasionally.
- Stir in the julienned carrot, sliced bell pepper, and broccoli florets. Cook for another 5 minutes until the vegetables are tender-crisp.
- Add the cooked udon noodles to the skillet along with the soy sauce and mirin, tossing everything together to combine well.
- Cook for an additional 2-3 minutes, ensuring the noodles are heated through.
