  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Broccoli florets - 100 grams
  • Green onion - 2 stalks, chopped
  • Tofu - 150 grams, cubed
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large non-stick skillet or wok, heat the sesame oil over medium heat.
  3. Add the minced garlic and ginger to the skillet and sauté for about 1 minute until fragrant.
  4. Add the cubed tofu and cook until golden brown, about 5-7 minutes, stirring occasionally.
  5. Stir in the julienned carrot, sliced bell pepper, and broccoli florets. Cook for another 5 minutes until the vegetables are tender-crisp.
  6. Add the cooked udon noodles to the skillet along with the soy sauce and mirin, tossing everything together to combine well.
  7. Cook for an additional 2-3 minutes, ensuring the noodles are heated through.
  8. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
